Cottage Cheese Egg Bites

Equipment

  • 1 muffin tin

Ingredients

  • 1 tsp olive oil
  • ½ white onion diced
  • ½ red bell pepper diced
  • ½ green bell pepper diced
  • ½ lb thinly sliced ham
  • 8 eggs
  • ¼ cup cottage cheese
  • 1 tsp kosher salt
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp black pepper
  • ½ cup shredded cheese

Instructions

  • Preheat oven to 350℉.
  • Heat a skillet over medium heat until hot. Add olive oil. Once shimmering, add vegetables. Season with salt. Cook for 5 minutes, or until soft, stirring occasionally. Set aside to cool while you prep the rest.
  • Grease muffin tins with olive oil. Use 1 - 2 pieces of ham (depending on size and thickness) to line each muffin tin. Use the bottom of a cup to gently press the meat down to the bottom of the tin.
  • Blend together the eggs, cottage cheese, and seasonings.
  • To assemble: spoon the cooked vegetables into each tin lined with ham. Then, pour the egg mixture to just below the top of the tin. Lastly, sprinkle cheese on top.
  • Bake at 350℉ for 20 minutes or until eggs are set. Remove and cool for 10 minutes.
