- 1 tsp olive oil
- ½ white onion diced
- ½ red bell pepper diced
- ½ green bell pepper diced
- ½ lb thinly sliced ham
- 8 eggs
- ¼ cup cottage cheese
- 1 tsp kosher salt
- 1 tsp onion powder
- ½ tsp garlic powder
- ½ tsp black pepper
- ½ cup shredded cheese
Preheat oven to 350℉.
Heat a skillet over medium heat until hot. Add olive oil. Once shimmering, add vegetables. Season with salt. Cook for 5 minutes, or until soft, stirring occasionally. Set aside to cool while you prep the rest.
Grease muffin tins with olive oil. Use 1 - 2 pieces of ham (depending on size and thickness) to line each muffin tin. Use the bottom of a cup to gently press the meat down to the bottom of the tin.
Blend together the eggs, cottage cheese, and seasonings.
To assemble: spoon the cooked vegetables into each tin lined with ham. Then, pour the egg mixture to just below the top of the tin. Lastly, sprinkle cheese on top.
Bake at 350℉ for 20 minutes or until eggs are set. Remove and cool for 10 minutes.
