Eastern NC Barbecue Sauce

This simple Eastern NC Barbecue sauce is vinegar based and perfect for mopping onto pork during the smoking process as well as dunking into and pouring over the finished pork.

Materials

  • 1 cup apple cider vinegar
  • 1 cup distilled white vinegar
  • ½ cup water
  • 3 tbsp brown sugar
  • 1 tsp kosher salt
  • 1 tbsp red pepper flakes
  • 1 tbsp hot sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp black pepper

Instructions

For the Sauce

  • In a small sauce pan, bring the water and vinegars to a low boil. Whisk in the remaining ingredients until brown sugar and salt have dissolved.
  • Pour into a glass container and let cool. Use some to mop onto the pork while cooking and the rest to ladle onto smoked pork while serving.
