Greek Lemon Potatoes

Roasted in a heavenly savory lemon broth, these Greek Lemon Potatoes are a delicious kick up from your standard roasted potatoes.

Materials

  • ½ cup olive oil
  • ¼ cup lemon juice
  • 1 cup vegetable or chicken stock
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 2 tsp dried oregano
  • 8 - 10 Yukon gold potatoes, cut into quarters and peeled
  • salt and pepper

Instructions

  • Preheat oven to 400 F. In a sheet pan, toss the potatoes in half ¼ cup of olive oil.
  • Season potatoes with salt, pepper, onion powder, garlic powder, and oregano. Toss to coat.
  • Roast potatoes for 20 minutes.
  • Remove from the oven and turn potatoes over. Pour in the broth, lemon juice, and remaining olive oil.
  • Return to oven and roast for 40 - 60 minutes, or until most of the liquid has evaporated and the potatoes are tender.
  • Remove potatoes from oven and place in a serving platter. Drizzle any remaining liquid over potatoes.
