Greek Lemon Potatoes

- ½ cup olive oil
- ¼ cup lemon juice
- 1 cup vegetable or chicken stock
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 2 tsp dried oregano
- 8 - 10 Yukon gold potatoes, cut into quarters and peeled
- salt and pepper
Preheat oven to 400 F. In a sheet pan, toss the potatoes in half ¼ cup of olive oil.
Season potatoes with salt, pepper, onion powder, garlic powder, and oregano. Toss to coat.
Roast potatoes for 20 minutes.
Remove from the oven and turn potatoes over. Pour in the broth, lemon juice, and remaining olive oil.
Return to oven and roast for 40 - 60 minutes, or until most of the liquid has evaporated and the potatoes are tender.
Remove potatoes from oven and place in a serving platter. Drizzle any remaining liquid over potatoes.
