King Oyster Mushrooms

These shredded and baked king oyster mushrooms are a delicious vegan alternative to pulled pork- savory, smoky, and satisfying.

Materials

  • 4 king oyster mushrooms
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • salt and pepper
  • ¼ cup barbecue sauce

Instructions

  • Preheat oven to 400 F. Clean mushrooms with a damp towel. Use two forks to shred the stems and caps into thin pieces. Place on a baking sheet lined with parchment paper.
  • Evenly toss mushrooms in 1 tbsp of oil, garlic powder, onion powder, paprika, salt, and pepper. Bake for 20 minutes, or until the edges get brown and crispy.
  • Place a sauté pan over medium high heat. Add remaining olive oil and transfer mushrooms to the pan with barbecue sauce. Stir and cook for a few minutes until mushrooms are coated. Serve on a salad, sandwich, nachos, or more.
