Mango Lassi Chia Clusters

Equipment

Materials

  • 1 cup strawberries chopped
  • 1 cup kiwi chopped
  • ¾ cup Greek yogurt
  • 4 tbsp chia seeds

For the Mango Lassi

  • 1 cup mango frozen or fresh
  • ½ cup whole milk yogurt
  • ½ cup milk
  • 2 tbsp maple syrup adjust to preference

Instructions

  • In a medium bowl, combine the strawberries, kiwi, chia seeds, and Greek yogurt. Stir until evenly combined.
  • Line a baking sheet with parchment paper. Use a ¼ cup to scoop the mixture into clusters onto the lined baking sheet. Freeze for 30 minutes.
  • While that's freezing, blend the mango, yogurt, milk, and maple syrup. Taste and add more maple syrup if desired. Pour into a shallow bowl.
  • After 30 minutes, remove the fruit from the freezer. Dunk one cluster at a time into the mango lassi, turning over to ensure all sides get evenly coated. Return to the baking sheet and repeat until all clusters are covered.
  • Return to the freezer and freeze for at least an hour.
