Oat Flour Pancakes

These gluten free Oat Flour Pancakes are fluffy, packed with nutrients, and naturally sweetened.

Materials

Pancake Batter

  • ¾ cup oat flour
  • 1 medium ripe banana
  • 1 egg
  • ½ tsp baking powder
  • cup milk of choice plus more if needed
  • ½ tsp vanilla
  • ¼ tsp cinnamon

Optional add-in's

  • ½ cup blueberries, chocolate chips, chopped pecans

Instructions

  • Blend all of the pancake batter ingredients until smooth. If adding in fruit, nuts or chocolate chips, add those in and use a spoon to mix until well combined. Add more milk if you like a thinner pancake, 1 tbsp at a time, until desired consistency is reached.
  • Heat a non-stick pan over medium heat until hot. Add a small pat of butter and melt. Pour ⅓ of the batter in, using a spoon to evenly spread out.
  • Cook until golden brown, about 2 - 3 minutes. Flip, then cook another 1 - 2 minutes. Remove from the pan and repeat until the batter is used up.
  • Serve hot with syrup.
