Pancake Batter
- ¾ cup oat flour
- 1 medium ripe banana
- 1 egg
- ½ tsp baking powder
- ⅓ cup milk of choice plus more if needed
- ½ tsp vanilla
- ¼ tsp cinnamon
Optional add-in's
- ½ cup blueberries, chocolate chips, chopped pecans
Blend all of the pancake batter ingredients until smooth. If adding in fruit, nuts or chocolate chips, add those in and use a spoon to mix until well combined. Add more milk if you like a thinner pancake, 1 tbsp at a time, until desired consistency is reached.
Heat a non-stick pan over medium heat until hot. Add a small pat of butter and melt. Pour ⅓ of the batter in, using a spoon to evenly spread out.
Cook until golden brown, about 2 - 3 minutes. Flip, then cook another 1 - 2 minutes. Remove from the pan and repeat until the batter is used up.
Serve hot with syrup.
