- 2 cups white vinegar
- 2 cups water
- 2 tbsp kosher salt
- 1 lb green tomatoes
- 1 tsp coriander seeds
- 1 tsp black peppercorns
- 1 garlic clove peeled and smashed
Next, add your vinegar, water, and salt to a medium sized pot. Bring to a gentle boil and remove from heat. Allow to cool slightly while you prep your jars.
Cut your tomatoes to your preference, either full moon slices or into wedges. Add cut tomatoes, coriander seeds, peppercorns, and garlic to a pint sized mason jar.
Carefully pour the liquid into the jar. Secure the lid on top and allow to cool on the counter. Once cooled, store in the fridge. Wait at least 24 hours before enjoying.
