Pumpkin Seed Granola

This Pumpkin Seed Granola is the perfect fall snack or topping for your yogurt. Homemade granola is so easy to make and far cheaper than store bought.

Ingredients

  • 4 cups old fashioned oats
  • 1 cup pepitas
  • ½ cup raw chopped nuts we like pecan or walnuts
  • 1 tsp pumpkin spice
  • 1 tsp kosher salt
  • ½ cup maple syrup
  • ½ cup coconut oil
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 350℉. Line two baking trays with parchment paper.
  • In a large mixing bowl, combine the oats, pepitas, nuts, pumpkin spice, and salt. Mix to combine.
  • In a small bowl, combine the melted coconut oil, maple syrup, and vanilla. Pour the coconut oil mixture into the mixed oats, and use a rubber spatula to evenly combine and coat.
  • Then, pour half of the coated oat mixture out onto the baking tray, spreading out evenly. Dump the rest on the other tray and spread.
  • Bake for 12 minutes. Remove from oven and stir. Return to the oven and bake another 12 minutes.
  • Remove from the oven and allow to cool for 30 minutes. (This will help it crisp up and form small clusters).
