Welcome to your new favorite no-bake dessert, Scotcheroos. This classic Midwest dessert is an irresistible combination of chocolate, peanut butter, and butterscotch combined with crunchy rice cereal.

Materials

  • 6 cups crispy rice cereal
  • 1 cup white sugar
  • 1 cup honey or light corn syrup
  • 1 cup creamy peanut butter
  • 12 oz semi-sweet chocolate chips
  • 12 oz butterscotch chips

Instructions

  • Line a 9 x 13' pan with parchment paper (or grease).
  • Place rice cereal in a large bowl and set aside. In a large saucepan over medium heat, combine the sugar and honey (or corn syrup). Once it has reached a low boil, remove from heat and stir in the peanut butter until smooth. Pour mixture over the cereal and combine evenly. Press into prepared pan.
  • Combine the butterscotch and chocolate chips into a microwave safe bowl. Microwave on low for about 2 minutes, stopping to stir every 30 seconds, until melted and smooth.
  • Spread over the rice cereal layer. Let sit at room temperature until completely cooled. Then cut and serve.
