Ingredients

  • 2 lb Yukon gold potatoes cut into 1 1/2-inch pieces
  • 1 lb smoked sausage sliced
  • 12 oz fresh green beans trimmed and cut into 2-inch pieces
  • 1 small yellow onion diced
  • 4 Tbsp unsalted butter sliced
  • 1 Tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1 cup chicken broth
  • Optional soup mix or onion mix

Instructions

  • Add potatoes, smoked sausage, green beans, and onion to a slow cooker.
  • Sprinkle with Cajun seasoning, garlic powder, onion powder, smoked paprika, and black pepper.
  • Pour chicken broth over the top.
  • Place butter slices over the mixture.
  • Cover and cook on low for 3 to 4 hours, or until the potatoes are tender.
  • Stir gently before serving.
