Equipment

  • 1 13 x 9 casserole dish

Materials

  • 1 tsp oil
  • 1 medium white onion finely chopped
  • 3 garlic cloves minced
  • 1 cup vegetable of choice (frozen or fresh) green beans, corn, etc.
  • 1 lb ground beef
  • salt and pepper
  • 1 cream of mushroom soup
  • 2 cups shredded cheddar cheese
  • 16 oz tater tots

Instructions

  • Preheat oven to 350℉.
  • Heat a skillet over medium heat. Once hot, add in oil and onions. Cook until softened, about 3 minutes.
  • Next, add in your garlic. Stir. Cook until fragrant, about a minute. Add in other vegetables. Cook for a few minutes or until softened.
  • Add in the ground beef and break up into small pieces with a wooden spoon. Season with salt and pepper. Once beef is browned, remove pan from heat and add in the cream of mushroom soup. Stir until combined.
  • In a greased casserole dish, spoon in your beef mixture, spreading out evenly. Next, top with cheese. Then line the top evenly with the tater tots.
  • Bake for 20 minutes, then bump your oven up to broil. Broil until tots have become slightly browned and crispy. (Watch carefully as broil time can depend upon the oven).
  • Remove and cool for 10 minutes.
