A Turkey Reuben is a lighter take on a classic Reuben subbing pastrami for turkey topped with melty Swiss cheese, tangy sauerkraut, and a delicious Russian dressing.
Make the dressing by combing all ingredients in a small bowl. Taste and add more salt if needed. Set aside.
Heat a cast iron skillet over medium low. Liberally spread butter on one side of each slice of bread. Place two pieces of bread butter side down, into the cast iron.
On the bread in the cast iron, smear on some dressing. Add 3 slices of Swiss to each and top with 4 slices of turkey. Top with sauerkraut and place other slice of buttered bread on top.
Place a tiny splash of water into the skillet and cover with a baking sheet. (This will help the sandwich heat through and melt the cheese). Cook until the one side is golden brown, about 2 minutes. (Check to make sure it doesn't burn). Once golden, flip, and cover again. Cook until golden brown.
Remove from the skillet and cut in half. Enjoy, dunking in the remaining Russian dressing.
