White Bean Pesto

This White Bean Pesto combines a traditional basil pesto with white beans for a perfectly creamy, spreadable pesto. Spread this on toasted baguette for the perfect high fiber snack or light lunch.

Ingredients

  • ½ 15 oz can white beans drained and rinsed
  • 2 cups basil
  • 2 small garlic cloves
  • 2 tbsp lemon juice
  • ¼ cup olive oil
  • ¼ cup freshly grated Parmesan
  • ¼ tsp salt

Instructions

  • In a food processor, combine all of the ingredients. Blend and taste. Add more salt if needed.
  • Serve on toasted baguette or with pasta.
