Easy Buckeyes Recipe is a quick and delightful treat that combines a creamy peanut butter center with a rich chocolate coating.

Ingredients

  • 1 cup creamy peanut butter
  • 5 tbsp unsalted butter, at room temperature
  • 1½ cups powdered sugar
  • 1 tsp vanilla
  • 2 cups semi sweet chocolate
  • 1 tbsp coconut oil

Recipe Instructions

  1. Prepare the Peanut Butter Mixture
    Using a hand mixer, cream together the softened butter and peanut butter until smooth. Add in the vanilla and powdered sugar, and mix on low until the mixture clumps together. Pinch off a tablespoon-sized piece and roll it into a little ball. Place the balls on a parchment-lined sheet pan. Chill in the freezer for 20 minutes.
  2. Melt the Chocolate
    In a medium bowl, combine the semi sweet chocolate and coconut oil. Melt in the microwave in 30-second intervals, stirring between sessions until the mixture is fully melted. Allow the melted chocolate to cool at room temperature until the peanut butter balls are chilled.
  3. Dip the Peanut Butter Balls
    Using a toothpick or skewer, dip each chilled peanut butter ball into the melted chocolate, leaving a small part of the top exposed. Carefully place the dipped ball back onto the sheet pan and remove the toothpick or skewer. Use a butter knife to patch and smooth over any gaps in the chocolate coating if needed.
  4. Final Chill
    Chill the completed Buckeyes in the refrigerator for 15 minutes to allow the chocolate to firm up. Enjoy these delightful treats once set.

  • Pinch off a tablespoon sized piece and roll in your hands into a little ball. Place on a parchment paper lined sheet pan, and repeat until all of the butter mixture is used. Chill in freezer for 20 minutes.
  • Add chocolate and coconut oil to a medium bowl and melt in microwave. (Do 30 seconds, stop and mix and then 30 more seconds and mix. Repeat until melted). Let cool at room temp until balls are chilled.
  • Use a toothpick or skewer to dip the peanut butter balls into the chocolate, leaving a bit of the top exposed. Carefully place the dipped ball back onto the sheet pan and remove the toothpick. Repeat until all are dipped.
  • Use a butter knife to patch up and smooth over the holes in the top of the buckeyes. Chill for 15 minutes to allow the chocolate to firm up and then enjoy.
  • Store in the fridge for up to a week.
