1 Small Mixing Bowl
1 Chefs Knife
- 2 cans of Le Sueur Peas (or canned peas of your choice)
- 2 hard boiled eggs chopped
- 1/2 cup finely chopped onion
- 1/2 cup duke's mayo
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder optional
Drain and rinse the canned peas, then place them in a mixing bowl.
Add the chopped hard-boiled eggs and finely chopped onion to the peas.
In a small bowl, mix together the mayonnaise, salt, black pepper, and garlic powder if desired.
Pour the mayo mixture over the peas and gently toss until everything is well coated.
Transfer the salad to an airtight container and refrigerate for at least an hour before serving to allow the flavors to meld.
