Fried Pork Chop Sandwich

- 4 boneless pork chops
- 1 cup panko bread crumbs
- ½ cup crushed Saltines
- ½ cup flour
- salt and pepper
- 1 egg beaten
- ½ cup buttermilk
- 1 cup oil
- dill pickles
- yellow mustard
- thinly sliced onion
- 4 kaiser rolls
Combine buttermilk and egg. Season with salt and pepper. In another bowl, combine panko, crushed Saltines, and season with salt and pepper. Place flour in a third and season with salt and pepper.
Coat chops in flour. Dip chops in egg mixture and then breadcrumb mixture. Allow to rest while oil heats up.
Pour oil into cast iron until about 1 inch deep. Heat over medium high heat until it reached 350 F.
Fry in hot oil until golden brown.
Place on buns with mustard, pickle, and onion.
