- 1 lb ground turkey or beef
- 2 medium carrots, diced
- 1 large white onion, diced
- 2 celery stalks, diced
- 1 tbsp olive oil
- 6 garlic cloves, minced
- 2 tbsp tomato paste
- ½ cup red wine
- 28 oz crushed tomatoes
- 14 oz oz stewed tomatoes
- 1 tsp red pepper flakes
- 2 tsp dried oregano
- 1 tbsp dried basil
- salt and pepper to taste
Heat a Dutch oven or large pot over medium high heat. Add ground turkey or beef. Break down into small pieces. Season with salt and pepper and cook until done. Scoop out the meat and set aside.
Add olive oil to the Dutch oven or pot and add onion, celery, and carrot. Cook until vegetables have softened, about 5 minutes. Add in your garlic, red pepper flakes, oregano, salt, pepper, and dried basil. Cook for another minute.
Add ground meat back in and add the tomato paste. Cook for another minute until tomato paste begins to stick to the bottom. Add the red wine, scraping the bottom of the pot to loosen any stuck bits.
Pour in both cans of tomatoes and bring to a slight boil. Reduce heat and bring to a simmer. Cover with a lid and let simmer for 1 - 2 hours. Taste and season with salt if necessary.
Serve over your favorite pasta.
