- 2 cups parsley washed and finely chopped
- ½ cup mint washed and finely chopped
- 2 medium tomatoes diced
- 1 medium onion diced
- ½ cup bulgur
- 2 small lemons juiced
- 2 garlic cloves minced
- ¼ cup olive oil
- salt to taste
Cook the bulgur according to package directions.
In a large bowl, combine all the ingredients and toss evenly. Taste and add more salt, olive oil, or lemon juice as needed. Serve at room temperature.
