For the Green Chili
- 1 16 oz can hatch green chile or 6 - 8 fresh chile roasted, peeled, and chopped
- 1 medium white onion chopped
- 1 tomato diced
- 3 garlic cloves minced
- 2 lbs boneless pork shoulder cut into 1 inch cubes
- 4 cups chicken stock
- 1 tbsp cumin
- salt and pepper to taste
For the burger
- 1 lb ground beef
- 4 slices American cheese
- salt and pepper
- 4 hamburger buns
For the Chili
Place a cast iron skillet over medium high heat. Once hot, add pork in one layer without overcrowding (you may have to do multiple batches). Fry on each side until golden brown, about 3 - 5 minutes total. Remove from heat.
Combine pork, onion, garlic, tomato, chile, cumin, salt, pepper, and chicken stock in your slow cooker. Cook on high for 4 hours.
For the burger
Form into four even burger patties. Season each side with salt and pepper. In a cast iron skillet over medium heat, add patties. Fry until the one side is done and flip. Cover this side with cheese and cover pan to allow cheese to melt. Cook to desired doneness.
Place burger on bottom bun and add burger. Dump chili on top. Alternatively, top the burger with the top bun and dump chili on top.
