Tomato Tart Recipe

- 2 medium sized heirloom tomatoes sliced
- ¼ white onion thinly sliced
- ¼ cup mayo
- ½ cup cheddar cheese shredded
- ½ tsp Italian seasoning
- salt and pepper to taste
- 1 sheet puff pastry thawed, cut into 4 rectangles
- 1 egg beaten
Preheat oven to 400℉. Line a sheet pan with parchment paper.
In a small bowl, mix together the mayo, cheese, Italian seasoning, salt and pepper. Once combined, taste and add salt if needed.
Place 2 - 3 tomato slices into 4 small piles (slightly smaller than the size of your puff pastry rectangles) at different corners of the sheet pan. Then, top with thinly sliced onion.
Then, take a big spoonful of the cheese mixture and gently spread on top of the onion. Repeat until all have cheese mixture on top and there is none left.
Gently top with the puff pastry, pushing the edges down with a fork to seal it. Then, brush the tops with the egg.
Bake for 20 minutes. Remove from oven and allow to cool for 30 minutes (so the cheese and set up). Enjoy.
