Tomato Tart Recipe

Ingredients

  • 2 medium sized heirloom tomatoes sliced
  • ¼ white onion thinly sliced
  • ¼ cup mayo
  • ½ cup cheddar cheese shredded
  • ½ tsp Italian seasoning
  • salt and pepper to taste
  • 1 sheet puff pastry thawed, cut into 4 rectangles
  • 1 egg beaten

Instructions

  • Preheat oven to 400℉. Line a sheet pan with parchment paper.
  • In a small bowl, mix together the mayo, cheese, Italian seasoning, salt and pepper. Once combined, taste and add salt if needed.
  • Place 2 - 3 tomato slices into 4 small piles (slightly smaller than the size of your puff pastry rectangles) at different corners of the sheet pan. Then, top with thinly sliced onion.
  • Then, take a big spoonful of the cheese mixture and gently spread on top of the onion. Repeat until all have cheese mixture on top and there is none left.
  • Gently top with the puff pastry, pushing the edges down with a fork to seal it. Then, brush the tops with the egg.
  • Bake for 20 minutes. Remove from oven and allow to cool for 30 minutes (so the cheese and set up). Enjoy.
