Tomato Tart Recipe
This Tomato Tart Recipe is a simple puff pastry tart made with fresh heirloom tomatoes, thin onion, cheddar, mayo, Italian seasoning, and a crisp pastry top. It is a good way to use ripe tomatoes when you want something easy, warm, and a little different from a regular tomato pie.

What Is A Tomato Tart?
A tomato tart is a baked dish made with tomatoes, pastry, and a creamy or cheesy filling. Some versions are open-faced, with the tomatoes arranged on top. Others bake more like an upside-down tart, where the tomatoes sit underneath the pastry and soften as everything cooks.
This version uses puff pastry cut into smaller rectangles, which makes the tart easy to portion. The tomatoes and onions bake with a cheddar mayo mixture, then the puff pastry turns golden on top.
The main ingredients are simple:
- Heirloom tomatoes
- Thinly sliced onion
- Mayo
- Shredded cheddar cheese
- Italian seasoning
- Salt and pepper
- Puff pastry
- Beaten egg

What Pastry To Use For A Tomato Tart?
Puff pastry is one of the easiest choices for a tomato tart because it bakes up crisp, flaky, and light without needing much prep. Store-bought puff pastry also keeps the recipe simple, which is helpful when fresh tomatoes are the main part of the dish.
For this tomato tart recipe, thawed puff pastry is cut into rectangles before baking. That gives you individual portions instead of one large tart that has to be sliced later.
A few pastry tips help:
- Thaw the puff pastry before using it.
- Keep it cold until you are ready to assemble.
- Cut it into even rectangles so the pieces bake at the same pace.
- Brush with beaten egg for a golden finish.
- Bake on parchment paper so the cheese mixture does not stick to the pan.

How To Keep Tomato Tart From Being Soggy?
Tomatoes hold a lot of water, so sogginess is the main thing to watch with any fresh tomato tart. The goal is to keep the pastry crisp while giving the tomatoes enough time to soften.
A few things make a difference:
- Use ripe but firm tomatoes.
- Slice the tomatoes evenly.
- Avoid adding too much salt too early, since salt pulls moisture from tomatoes.
- Do not overload each tart with too many tomato slices.
- Let the tart cool before serving so the cheese mixture can set.
- Bake on parchment paper to help with clean removal.
The cooling time matters more than people think. If the tart is cut or moved too soon, the cheese mixture can still be loose. Letting it sit gives everything time to firm up.

How To Make A Tomato Tart With Fresh Tomatoes?
Fresh tomatoes are the best choice for a tomato tart, especially when they are in season. Heirloom tomatoes work well because they are juicy, colorful, and tender, but any ripe medium tomato can work.
For a good fresh tomato tart, slice the tomatoes thin enough to bake through but thick enough that they do not disappear into the filling. The onion should be thinly sliced too, so it softens in the same amount of time.
In this recipe, the tomatoes are paired with a cheddar mayo mixture instead of a custard. That keeps the tart rich without making it heavy. The Italian seasoning, salt, and pepper keep the filling simple, while the puff pastry gives the whole thing structure.
If your tomatoes are extra juicy, pat the slices lightly with a paper towel before assembling. You do not need to dry them out completely. Just remove the excess surface moisture.

What To Eat With A Tomato Tart?
A tomato tart can be served warm or closer to room temperature, which makes it easy to fit into different meals.
Good pairings include:
- Simple green salad
- Tomato soup
- Grilled chicken
- Roasted vegetables
- Scrambled eggs
- Bacon or sausage
- Fresh fruit
- Pasta salad
- Shrimp
- Steak
For brunch, serve it with eggs and fruit. For dinner, pair it with a salad and chicken or seafood. If you are serving it as an appetizer, cut each tart into smaller pieces once it has cooled enough to hold together.

Storage Instructions
Tomato tart is best the day it is baked, while the pastry still has some crispness. Leftovers can be stored, but the pastry will soften as it sits.
- Refrigerator: Store leftovers in an airtight container for up to 3 days.
- Reheating: Reheat in a 350°F oven until warmed through. This helps the pastry crisp back up better than the microwave.
- Air Fryer: Reheat smaller pieces in an air fryer for a few minutes until warm.
- Microwave: Use only if needed. It will warm the tart, but the pastry will be softer.
- Freezer: Freezing is not recommended because fresh tomatoes and puff pastry do not hold their texture well after thawing.
Let the tart cool before storing so steam does not get trapped in the container. For the best results, reheat uncovered and serve warm.

- Bake for 20 minutes. Remove from oven and allow to cool for 30 minutes (so the cheese and set up). Enjoy.
