This blackened mahi mahi recipe is a great weekday meal when you want something fast and nutritious. This Hawaiian fish is firm yet flaky and only takes minutes to cook.

We use a Cajun seasoning mix to achieve a delicious blackened crust on the fish. This seasoning mix contains garlic powder, onion powder, cayenne, smoke paprika, dried oregano, dried thyme, salt and pepper.

Enjoy mahi mahi blackened over rice with some roasted vegetables. Or for a low carb option, place on top of a salad with a slice of lemon. Our favorite way to enjoy this fish is to make blackened fish tacos.

What Does Mahi Mahi Taste Like

Mahi mahi is a mild tasting fish with a faintly sweet taste. It’s more fishy tasting than cod or haddock but less than a swordfish.

This fish is a kind of dolphin fish (but definitely NOT a dolphin) and in Hawaiian mahi mahi translates to strong strong.

How To Make Blackened Mahi Mahi

The first step is to take your store bought mahi filets and pat dry with paper towels. Removing moisture from the filets will help the fish to get a nice sear, rather than steaming.

Next it’s time to season our fish. Generously season the filets on both sides with Cajun blackened seasoning. Since this already contains salt, no need to add more salt.

Now add olive oil to a cast iron skillet over medium high heat. Put in your fish and lower to medium heat. Cook for 2 – 3 minutes until it’s nicely browned and flip.

Cook for another 2 – 3 minutes and remove fish from the skillet. Place on a plate with a paper towel. 

To make blackened mahi mahi tacos, try our coleslaw recipe. We like to use corn tortillas, but you can use flour if you prefer. Warm your tortillas and then top with pieces of the fish.

Top with a healthy dollop of the coleslaw and a squeeze of fresh lime. You could also top it with a delicious habanero mango salsa.

There are so many delicious sides to enjoy with fish tacos. Try cilantro lime rice, creamy pinto beans, fresh guacamole, and pico de gallo with tortilla chips. 

Other great sides include jalapeno poppers, grilled corn, Caesar salad, gazpacho, and refried beans.

How Do I Make My Fish Really Crispy

Pat your fish to remove the excess moisture as much as possible. If there is excess moisture your fish will steam rather than sear in a hot skillet.

2 lbs of fresh mahi mahi

2 tbsp Cajun blackening seasoning

1 tbsp neutral oil

Pat dry with paper towels on all sides with a paper towel to remove the excess moisture. 

Sprinkle the seasoning over the filets and spread the seasoning on both sides. Add your oil to a skillet over medium high heat until it slightly begins to smoke.

At this point, add your filets and turn the heat down to medium. Cook for 2 – 3 minutes until nicely browned and flip. Cook for another 2 – 3 minutes and remove from the skillet.

  • Add oil to the pan, and let it get to a hot heat. Pat your fish dry, and rub with seasoning, and then cook in the pan.
