Broken Glass Cake Recipe
Broken Glass Cake is a colorful, visually striking dessert made with cubes of gelatin suspended in a creamy whipped topping mixture over a buttery graham cracker crust.

It’s an ideal dessert for celebrations or special gatherings.
Ingredients
- 1 (3 oz) packet lime gelatin
- 1 (3 oz) packet strawberry gelatin
- 1 (3 oz) packet orange gelatin
- 4½ cups boiling water, divided
- 1½ cups crushed graham crackers
- ⅓ cup white sugar
- ½ cup unsalted butter, melted
- ¼ cup cold water
- 1 envelope unflavored gelatin
- 1 cup pineapple juice
- 1 (8 oz) carton frozen whipped topping, thawed
Recipe Instructions
- Combine lime gelatin with 1½ cups boiling water, stirring until fully dissolved. Pour into a lightly greased 8×4-inch pan. Repeat this process separately with strawberry and orange gelatin, placing each into their own pan. Refrigerate pans for at least an hour, until gelatin is firm.
- In a separate bowl, combine crushed graham crackers, sugar, and melted butter. Press this mixture gently into a greased 13×9-inch baking dish. Refrigerate to set.
- In a small bowl, soften unflavored gelatin in cold water for about 5 minutes. In a saucepan, bring pineapple juice to a boil, then add softened gelatin, stirring until completely dissolved. Transfer the pineapple mixture to a large bowl and allow it to cool for about 20 minutes.
- Whisk the thawed whipped topping into the cooled pineapple mixture until smooth and creamy.
- Once the gelatin layers are firm, carefully cut them into ½-inch cubes. Gently fold about two-thirds of these cubes into the whipped topping mixture.
- Pour this creamy mixture over the prepared graham cracker crust. Scatter the remaining gelatin cubes on top for decoration. Chill in the refrigerator for at least 2 hours before serving.
Storage Instructions
- Refrigeration: Store any leftovers covered in the refrigerator for up to 3 days. The dessert should remain chilled until served.
- Freezing: Not recommended, as freezing alters the consistency and texture of the gelatin and whipped topping layers.

- Meanwhile, in a small bowl, soften unflavored gelatin in cold water for 5 minutes. In a small saucepan, bring pineapple juice to a boil. Stir in unflavored gelatin until dissolved. Transfer to a large bowl and let sit to cool down for 20 minutes.
- In a large bowl, whisk whipped topping into pineapple juice mixture. When flavored gelatins are firm, carefully cut into 1/2-in. cubes. Gently fold 2/3 of the cubes into whipped topping mixture.
- Carefully pour the mixture over the crust. Scatter the remaining gelatin cubes over the top to decorate. Chill in the refrigerator for at least 2 hours.
