Sundrop Cake Recipe
Sundrop Cake is a delightful dessert featuring a moist, tender cake infused with the distinctive citrus notes of SunDrop soda and topped with a sweet glaze. It’s perfect for gatherings or everyday treats.

Ingredients
For The Cake:
- 1 cup butter, softened
- ½ cup shortening
- 3 cups granulated sugar
- 5 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon lemon extract
- 3 cups all-purpose flour
- ¾ cup SunDrop soda

For The Glaze:
- 2 tablespoons butter, melted
- 2 cups powdered sugar
- ¼ cup SunDrop soda
Recipe Instructions
- Preheat your oven to 325°F. Grease a bundt or tube pan lightly and evenly with shortening, then dust with flour. Tap out excess flour and set aside.
- In a stand mixer fitted with a paddle attachment (or using an electric hand mixer in a large bowl), beat the softened butter and shortening on medium speed until smooth (1–2 minutes). Add granulated sugar and continue beating until mixture becomes fluffy and light.
- Reduce mixer speed to medium-low. Add eggs, vanilla extract, and lemon extract, mixing until just combined. Scrape down sides as needed.
- Lower speed to low and gradually alternate adding flour and SunDrop soda, mixing gently until ingredients are just combined. Avoid overmixing.
- Pour batter into the prepared pan, smoothing the top gently. Tap pan lightly to ensure even batter distribution.
- Bake for approximately 1 hour and 15 minutes, until a toothpick inserted in the center comes out with moist crumbs but no wet batter.

- While cake cools, whisk melted butter, powdered sugar, and SunDrop soda in a bowl until smooth to create glaze.

Notes
When making the frosting, make sure your butter and the Sundrop soda are both room temperature. If not, it will curdle.
