Lamb Over Rice

Materials

  • 1 cup white rice
  • 1 lb ground lamb
  • ½ onion, grated
  • 3 garlic cloves, minced
  • 2 tbsp freshly chopped parsley
  • 1 tbsp freshly chopped mint
  • 1 tbsp baharat
  • tsp salt
  • 1 tsp black pepper
  • ¼ cup breadcrumbs
  • ½ tbsp olive oil

Instructions

Rice

  • Rinse the rice until the water runs clear. If using a rice cooker, place in cooker and add water to 1 cup line. Cook until done.
  • If using the stove top, rinse the rise until the water runs clear. Add 1 cup of rice and 2 cups of water to a medium pot. Bring to a boil and add a pinch of salt. Reduce heat to low, cover with a lid, and cook for 18 minutes (don't take the lid off). Turn the heat off and let sit, covered, for 10 more minutes.

For the lamb

  • Combine all of the ingredients in a medium sized bowl. With damp hands, combine the meat into 8 equal sized, oblong meatballs.
  • Heat olive oil in a cast iron over medium high heat. Cook in batches for 5 minutes, turning over so all sides are brown.
  • Serve over rice with yogurt, salad, and hummus.
