Lamb Over Rice

- 1 cup white rice
- 1 lb ground lamb
- ½ onion, grated
- 3 garlic cloves, minced
- 2 tbsp freshly chopped parsley
- 1 tbsp freshly chopped mint
- 1 tbsp baharat
- 1½ tsp salt
- 1 tsp black pepper
- ¼ cup breadcrumbs
- ½ tbsp olive oil
Rice
Rinse the rice until the water runs clear. If using a rice cooker, place in cooker and add water to 1 cup line. Cook until done.
If using the stove top, rinse the rise until the water runs clear. Add 1 cup of rice and 2 cups of water to a medium pot. Bring to a boil and add a pinch of salt. Reduce heat to low, cover with a lid, and cook for 18 minutes (don't take the lid off). Turn the heat off and let sit, covered, for 10 more minutes.
For the lamb
Combine all of the ingredients in a medium sized bowl. With damp hands, combine the meat into 8 equal sized, oblong meatballs.
Heat olive oil in a cast iron over medium high heat. Cook in batches for 5 minutes, turning over so all sides are brown.
Serve over rice with yogurt, salad, and hummus.
