What Are Cottage Cheese Egg Bites?

Cottage cheese egg bites are small baked egg cups made with blended eggs and cottage cheese. The mixture bakes into a soft, sturdy bite that can be eaten for breakfast, lunch, or a quick snack.

This version uses ham as the liner for each muffin cup, then adds cooked peppers and onion, blended eggs, cottage cheese, seasonings, and shredded cheese on top.

The basic mix includes:

  • Eggs
  • Cottage cheese
  • Ham
  • White onion
  • Red bell pepper
  • Green bell pepper
  • Shredded cheese
  • Onion powder
  • Garlic powder
  • Salt and black pepper

What Does Cottage Cheese Do For Egg Bites?

Cottage cheese helps make egg bites softer and creamier than eggs alone. When blended with the eggs, it breaks down into the mixture instead of staying chunky.

It also adds protein, which makes the egg bites more filling. You do not need much. A small amount of cottage cheese can change the way the eggs bake without making them taste like cottage cheese.

For the smoothest result, blend the eggs and cottage cheese together before pouring the mixture into the muffin tin. This helps the egg bites bake evenly and keeps the texture consistent.

Why Are My Cottage Cheese Egg Bites Watery?

Cottage cheese egg bites can turn watery for a few reasons. Most of the time, it comes from extra moisture in the vegetables, cottage cheese, or the egg mixture itself.

Common causes include:

  • Vegetables were not cooked before baking
  • Peppers and onions released too much water
  • Cottage cheese had a lot of liquid in the container
  • The egg bites were underbaked
  • The muffin tin was overfilled
  • The egg bites were stored while still hot

Cooking the peppers and onion first helps a lot. It softens them and cooks off some of the extra moisture before they go into the muffin tin.

If your cottage cheese looks especially wet, you can stir it first or drain off a little liquid before blending. After baking, let the egg bites cool for about 10 minutes so they can set before removing them from the pan.

How Many Eggs For 12 Egg Bites?

For 12 standard muffin tin egg bites, 8 eggs usually works well when you are also adding cottage cheese, vegetables, ham, and shredded cheese.

That amount fills the cups without making the egg bites too dense or too thin. Since the ham lines the muffin cups and the vegetables take up space, you do not need a full egg per cup.

A simple guide:

  • 6 eggs: smaller, lighter egg bites
  • 8 eggs: good for 12 standard muffin cups
  • 10 to 12 eggs: better for larger egg bites or fewer add-ins

How To Tell If Cottage Cheese Egg Bites Are Done?

Cottage cheese egg bites are done when the centers are set and no longer look wet. They may puff a little in the oven, then settle as they cool.

Look for these signs:

  • The tops look set, not glossy
  • The centers do not jiggle when the pan is gently moved
  • The edges pull slightly away from the muffin tin
  • A knife inserted into the center comes out clean
  • The ham edges look lightly browned

At 350°F, this usually takes about 20 minutes, but ovens and muffin tins can vary. If the centers still look loose, give them a few more minutes and check again.

Let them cool for 10 minutes before removing them. They will firm up more as they sit.

Storage Instructions

Let the cottage cheese egg bites cool completely before storing.

  • Refrigerator: Store in an airtight container for up to 4 days.
  • Freezer: Freeze for up to 2 months. Wrap individually or place parchment between each egg bite.
  • Reheating From The Fridge: Microwave for 20 to 40 seconds, or until warm.
  • Reheating From Frozen: Microwave in short intervals until heated through, or thaw overnight in the refrigerator first.
  • Best Storage Tip: Do not store them while they are still hot, since trapped steam can make them wet.
