- 1 lb flank steak or other cheap cut

- 3 tbsp soy sauce
- 2 tbsp Shaoxing wine
- 1 tbsp brown sugar
- 1 tbsp cornstarch
Stir-fry
- 1 head broccoli cut into bite-sized pieces
- 1 tbsp cornstarch
- 4 garlic cloves chopped
- 1 1 in piece ginger, chopped
Recipe Instructions
- Thinly slice the beef against the grain into 1/4 inch thick slices. Transfer to a small bowl. Add soy sauce, oil, cornstarch, and baking soda is using*. Gently mix well by hand until all the slices are coated with a thin layer of sauce. Marinate for 20 minutes while preparing the other ingredients.
- Combine all the ingredients for the sauce in a medium-sized bowl. Mix well and set aside.
- Add the oil to a large skillet over medium heat and swirl to coat the bottom. Spread the steak in a single layer, working in batches. Allow to cook without touching for 30 seconds, or until the bottom side is browned. Flip to cook the other side for a few seconds. Stir and cook until the surface is lightly charred and the inside is still pink. Set aside and repeat until all meat is cooked.
- Add a little oil and broccoli to the skillet. After a couple of minutes, add the garlic and ginger and cook for another minute.
- Add ¼ cup of water, bring to a boil, and cover. Steam until the broccoli just turns tender and the water evaporates,1 minute or so.
- Next, add the steak back in and pour in your sauce. Stir your sauce before adding to mix back in the cornstarch. Cook and stir until sauce thickens, about 1 minute and remove from heat. Serve immediately with white rice.
