Spread a layer of seasoned sushi rice, pressing it gently to create a compact base. 

Flaked and mixed with creamy mayo, Sriracha, furikake, and soy sauce, the salmon is spread over a baking dish to form the first layer.

Bake for 10 – 15 minutes to warm everything up, and next comes the toppings. Traditional sushi ingredients like sliced cucumbers, avocado, and seaweed strips can be arranged on top or served on the side.

Ingredients
  

Sushi Rice

  • 4 cups cooked short grain rice
  • ½ cup rice vinegar
  • ¼ cup sugar
  • 1 tsp salt

Sushi Bake

  • 1 lb salmon filets
  • 1 tsp garlic powder
  • salt and pepper
  • ½ cup Japanese mayo
  • ½ cup Sriracha adjust to suit your spice preference
  • ¼ cup furikake
  • 1 tbsp soy sauce
  • 1 tbsp sesame seeds
  • ½ cup chopped green onion

Serve with

  • sliced cucumber
  • avocado slices
  • nori
  • spicy mayo

Recipe Instructions
 

For the Sushi Rice

  • Over medium high heat, bring the rice vinegar, sugar, and salt to a boil. Cook until the sugar is dissolved. Allow to cool and then stir into the cooked rice.

For the Bake

  • Preheat oven to 425 F.
  • Season salmon with garlic powder, salt, and pepper. Place on an oiled sheet pan and cook until done, about 20 minutes.
  • In a bowl, carefully flake the salmon into small pieces, carefully removing the skin. Mix with Sriracha, mayo, furikake, and soy sauce.
  • In a 9 x 13 casserole dish, carefully spread out all the sushi rice. Sprinkle with furikake. Next, spread the salmon mixture out evenly across.
  • Bake for 10 minutes, then broil for 2 – 3 minutes or until toasty.
  • Sprinkle with green onions and drizzle with spicy mayo, if desired. Serve with nori, cucumber, and avocado.
